Astragalus is a large genus of over 3,000 species of herbs and small shrubs, belonging to the legume family Fabaceae and the subfamily Faboideae. It is the largest genus of plants in terms of described species.  Astragalus honey is also known as “king of honey”.  It is unheated when jarred, so as to keep its flavor and nutrition, including vitamins, minerals, enzyme, and organic acids in its live form.

Sourced from the Anatolian Highlands at 1500 – 2000m altitude, the plant grows on rocky slopes, resistant to cold and wind. It survives harsh conditions and those same qualities are passed on through it’s honey. The Astragalus plant is a distinct purple colour.
